The Cut:

One cut roughly 2 - 2.5 inches thick and bone size varies. Rose veal soup bones are an excellent choice for bone broth, stocks, and stews when chicken is too light and beef is too heavy. These provide lean protein, collagen, and a more delicate flavor to soups and stews that carries herb flavors far into the finish.

The Meat:

Rose veal is widely considered to be the humane veal, and farmers Ariel and Matt keep a small herd of pastured Holstein cows to provide fresh milk to their calves from birth. They are supplemented with hay cut the previous Summer from their own fields and are processed at an older age - this gives the meat its rosy hue and deeper flavor than store-bought options. The calves animals are raised together in groups to support healthy, natural behaviors and are processed at an Animal Welfare Approved facility.
